Cantine Eredi dei Papi, a young, entrepreneurial winery, was founded by the brother and sister duo of Chiara and Lorenzo Iacoponi. The two siblings grew up right where the wineries are today, in Monte Compatri amid the hills of the Castelli Romani. Here, on the slopes of the Latium Volcano, their grandfather handed down to them a passion for nature and vineyards. This winery began their activity in 2017, initiating a low-yield, quality-focused production process and adopting the motto “wine is made in the vineyard.” One of the winery’s objectives is to become an ambassador for the excellence of Lazio wines on the domestic and international wine landscape. In the vineyard, from pruning to managing greenery to the harvest, everything is done rigorously by hand, to achieve the concentration of precious nutrients, sugars, and polyphenols in the bunches, as well as the creation of the best microclimate for the fruit to mature. In the wine-making phase, the utmost attention is paid to respecting specific quality standards, like optimum grape health and a ripening perfectly in line with the oenological objectives established for the various types of wine. The alcoholic fermentation of the must, obtained through soft pressing, is heat controlled. The white wine is refined on fine dregs until the month of December, while the red is aged for about a year. The wine cellar seeks to handle the wine as little as possible, allowing it to preserve the aromas typical of the variety and consequently to best reflect the territory’s identity.
